Wheat 'Sausage' Patties

Okay, I'm giving you amounts on spices and herbs here, but after making a batch, you might want to tweak the amounts for personal tastes....

2 T. dried chopped onions,

2 c. cooked cracked wheat**

2 large eggs

1 tsp. ground sage

1/2 tsp. garlic granules 

1/2 tsp. sea salt

1/4 tsp. each: dried thyme, crushed marjoram, crushed basil, ground rosemary

a dash or two of cayenne

a bit of water only if needed

Olive oil or cooking oil: start with 3 T.

Stir together: onion, cooked wheat, eggs, sage, garlic granules, salt, herbs, cayenne. Then ONLY IF needed, add a bit of water.  Heat oil on medium; when hot, drop 2 heaping Tablespoon dollops on hot oil and smooth out into 1/4-inch thick patties (do not worry about making these perfectly round patties, just gently smooth them out to the thickness listed). Cook 3 to 4 minutes on each side, until nicely golden.....turn only once carefully to cook other side.....they are tender but will hold together as they cook. When done, put them on paper towel to cool slightly. Makes 14 to 16 patties.
