Apple Lentil Cake
This recipe originally came from my long time friend Zo'an, I might have since changed a couple of things, but want to say what an amazing cook Zo'an is....always delish foods!! I assigned this recipe to a lady to help make samples for a community survival class I was invited to teach; her husband ate almost half of the cake before she left the house!

3 eggs
2 c. cooked lentils (brown or green)
1/4 c. vegetable oil
1 and 1/2 c. sugar
1 and 1/2 tsp. vanilla
2 c. unbleached flour
2 tsp. baking soda
1 and 1/2 tsp. ground cinnamon
1/4 tsp.each ground nutmeg and ground cloves or ginger
2 c. chopped or diced apples, washed and cored but not peeled
1/2 c. chopped walnuts (optional)

Preheat oven to 350°. Grease/flour 9x13 pan.

In blender: eggs and cooked lentils, whiz until smooth, pour into mixing bowl. Add oil, sugar, vanilla, stir thoroughly. Add flour, baking soda, spices, chopped apples and nuts; stir. Scrape into prepared pan, smooth the top. Bake 35 to 40 minutes, until top bounces back to touch Makes 12 servings.
