This recipe can also be used to make 1 loaf of great Oatmeal Bread....or 1 dozen Oatmeal Buns....

Best Ever Oatmeal Rolls​

Makes 18 marvelous oatmeal rolls....

​

​

1 and 3/4 c. very HOT water

3/4 c. dry quick oatmeal

3 T. melted butter or oil

1/4 c. brown sugar

1 tsp. sea salt

1/2 c. whole wheat flour

1 scant T. dry yeast

2 and 3/4  to  3 and 1/4 c. unbleached flour

Mix hot water and oatmeal, let sit 15 minutes; stir a few times. Add butter or oil, brown sugar, salt, whole wheat flour;  stir thoroughly.  When lukewarm to touch:  add yeast, stir, let sit to sponge for

10 minutes.  Add 2 cups of the unbleached flour;  knead; adding more flour as needed to make a moderate dough.....please......do not make the dough too stiff.   Cover, let rise to double.

Grease and flour a large baking pan.  Punch down dough, divide in half. Form 9 rolls from each half and place evenly spaced on baking sheet. Cover, let rise until doubled, 50 to 65 minutes.

Preheat oven to 350°.

 

Bake 20 to 25 minutes, until nicely browned.
