Brown Bread Muffins

Nothing like brown bread with baked beans. Here's a simple way to have that taste without the work/time of making traditional brown bread....

**1 c. buttermilk

1/4 c. oil

1/4 c. molasses

4 T. raisins

1 large egg

1 c. whole wheat flour

1/2 c. unbleached flour

1/2 c. stoneground cornmeal

2 T. brown sugar

1/4 tsp. sea salt

1 tsp. baking soda

 

 

Grease a 12-cup muffin tin. Preheat oven to 400°. Place in blender: buttermilk, oil, molasses,ÌŠ

raisins, egg. Blend just a few times to chop raisins a bit, and mix all. Pour into a mixing bowl.

Add flours, brown sugar, salt, baking soda. Mix all just to moisten, do not over-stir. Fill muffin

cups 3/4ths full. Bake 18 to 24 minutes, until tooth pick inserted in middle comes out clean.

Cool 2 to 3 minutes before removing from pan. Makes one dozen.

**in place of buttermilk, can use 1 c. water + 1 T. vinegar. Add ¼ c. dry milk to the flours
