Meatballs in Sauce
This was one of the samples made for a wheat tasting event. Got very good reviews. This is just one suggested use for a healthier ground beef mixture. Use meat that is at least 80/20.

3 cups meat-wheat mix (2 c. ground beef + 1 c. cooked cracked wheat)
1 to 2 large eggs (start with one)
2/3 c. minced fresh onions or reconstituted dried onions, drained
1 and 1/2 tsp. garlic salt

**sauce of your choice, about 3 cups/24 oz., such as spaghetti sauce

Mix meat/wheat, egg(s), onions, garlic salt. Form 32 balls. Brown in a little oil on all sides. Turn heat to low. Add sauce of choice. Let simmer about 25 minutes or so; may want to cover while simmers.
Makes 4 to 6 servings. [NOTE: the meatballs could be baked in the oven]

**sauce ideas: spaghetti/marinara sauce......sweet n' sour sauce......creamy mushroom sauce for a
swedish meatball......alfredo sauce....cheese sauce....barbeque sauce....be creative. Make certain
the sauce used isn't too thick [about the consistency of spaghetti sauce] and equals 3 cups.
