[If you are making a savory dish that calls for jiffy corn muffin mix, use only up

to 1 tsp. of sugar in the homemade mix below, instead of the 3 T. of sugar]

Janet's Jiffy Corn Muffin Mix

Make your own mix!!  It has better ingredients and is very quick n' easy. I originally

had the measures of cornmeal at 1 cup and flour at 1/2 cup, but since changed it, 

as it was just a tad too crumbly.....

​

3/4 c. yellow cornmeal

3/4 c. flour

3 T. sugar

scant 1 tsp. salt

2 T. non-instant dry milk powder

scant 1 T. baking powder

​

Stir all dry ingredients thoroughly, makes about a cup and a half of mix. Can store

in a jar with a tight lid.

For corn pancakes:

Stir into the dry mixture....

​

2 T. oil

1 egg

1/3 c. flour

enough water to get a pancake batter consistency, start with 1 cup water

​

Cook as you would any pancake.

[Note: make a more-moist muffin by adding 1/2 cup sour cream + another T. of oil.]

For 6 corn muffins: 

Preheat oven to 400°. Grease a 6-muffin tin (or line with paper baking cups)

Stir into dry mixture, just to combine, batter will be a bit lumpy.....

​

1 T. oil

1 egg

1/3 c. water

 

Let this mixture sit 3 to 4 minutes. Then spoon into muffin tins, about 3/4 full

each.  Bake until golden brown, 13 to 16 minutes, until middle bounces back

when touched.​

Jiffy Corn Pudding, a savory side dish.....

​

Stir into 1 recipe of dry corn muffin mix:

2 eggs

1 can (14 oz.) creamed corn

1 c. *sour cream

1 c. corn (frozen/thaw…or freeze-dried reconstituted….or canned/drained)

 

Preheat oven to 325°. Melt 1 stick (1/2 cup) of butter in preheating oven in a 9x9

square pan…watch carefully so it does not burn…remove from oven. Pour stirred

mixture into hot butter/pan. Bake for up to 1 hour. (can put pan on a baking sheet

to avoid spills). 

 

*or use a can (7.6 oz) of Nestle media crema with 3 T. water and  2 tsp. white or apple

cider vinegar stirred in….just let it sit a few minutes to make sour cream

Easy Hush Puppies

 

1 recipe mix

1/4 c. unbleached flour

1/4 c. dried chopped onions, reconstituted and drained

1 egg

1/3 c. water

oil for frying

 

Preheat oil in deep fryer to 375°.  Combine the mix, flour, onion, egg, and water.  Cook in small batches: gently drop by teaspoonful into hot oil,  fry 2 minutes on each side until golden brown. Remove to paper towel and let drain while making more. Makes 2 dozen small hush puppies.
