Mac n' Cheese

The Mix:

heaping 1/2 c. nonfat dry milk powder

heaping 1/2 cup cornstarch

2 c. cheese powder

1/4 to 1/2 tsp. onion granules or powder

up to 1/2 tsp. paprika

1/3 c. butter powder (optional)

Mix well; store in air-tight container.

Making Mac n' Cheese:

1 and 3/4 c. dry macaroni

2/3 c. water

1/2 c. dry mix from above

1 to 2 T. fresh butter (if not using butter powder)

​

Cook macaroni until tender to your preference; drain; immediately put back into saucepan. Add water and dry cheese mix; stir to combine.  Cook on medium-low until thickened; stir constantly.

Take off heat; add fresh butter if using (instead of the fresh butter, can add 1/4 cup grated fresh sharp cheddar), cover and let sit a few minutes.
