Apple Crisp (uses dried apples)


4 (heaping/packed) cups of dehydrated apples
8 c. hot water
*one packet dry apple cider drink mix

up to 1/2 c. brown sugar, according to taste
1 tsp. cinnamon


In a large sauce pan combine water, apple slices, cider mix/brown sugar (see below), and 1 tsp. cinnamon, bring to a boil. Reduce heat to lowest, let simmer about 20 minutes, turn off heat, let sit in pan/liquids 10 minutes. Drain off liquid and reserve it; adding back about 1 cup liquid into the apple mixture.

 


Preheat oven to 400°.

Butter a square or oblong baking dish. Place prepared apple mixture evenly in buttered baking dish.

Crumble oat topping:

1/2 c. unbleached flour (or 1/4 c. flour + 1/4 c. whole wheat flour)
3/4 c. quick oatmeal

1/8 tsp. sea salt
1/3 to 1/2 c. brown sugar, firmly packed 
1 tsp. ground cinnamon 
1/2 c. cold butter (one stick)

 

Mix flour, oats, salt, brown sugar, cinnamon in a large bowl. Cut cold butter into a few pieces and rub with fingers into mixture until coarse crumbs form. Sprinkle this topping onto apple mixture.

 

Place in oven uncovered and bake about 20 or so minutes, until topping is golden brown.

*This is my secret weapon to 'up' the apple flavor when using dried apples: we use Alpine dry cider,

1 serving packet (0.74 oz.) and just add it dry to the brown sugar along with the tsp. of cinnamon. The dry cider mix has sugar in it so you can choose to use less brown sugar according to taste if wish.
