Homemade Grate Nuts

Yes, grate nuts! This cereal was originally made by grating it after it was baked.....

​

​

1 and 3/4 c. whole wheat flour

1/2 c. dark brown sugar

1/4 tsp. sea salt

1/2 tsp. baking soda

1 c. buttermilk or soured milk

Mix all ingredients together, beating well until smooth. Spread mixture onto a parchment paper lined (or well buttered) 11x15x1 cookie sheet.  Bake for 15 minutes in 375° oven. Remove cereal from the oven, brake into pieces and cool completely. Once cool, grind in short spurts in a food processor until it just becomes "crumbly".  Return crumbs to the cookie sheet or a large baking pan. Bake in 250° oven for one hour or until crisp, stirring every 15 minutes: stir from edge to the middle to avoid spills. Cool the cereal and store in an air tight container in the pantry (about two weeks) or freeze (2 to 3 months).

Note:  can put ground chunks in a strainer and sift out smaller granular pieces.  Larger pieces used

for cereal and casseroles. Finer pieces used as you would graham cracker crumbs for pie crusts and other desserts.

Pie Crust:

1 and 1/3 c. finer pieces grate nuts crumbs

2 to 3 T. sugar

1/3 c. melted butter 

 

Using the finer crumbs sifted from the grate nuts cereal, combine all of the ingredients, mix well and press firmly against sides and bottom of pie tin. Pour your chosen filling into the shell and refrigerate until firmly set.
