Coconot Cookies

NO coconut but certainly buttery crispy tasty cookies.  Can use purchased Bisquick in place

of making your own.... Makes 5 dozen cookies.....

2/3 c. butter, softened

1 and 3/4 c. sugar 

2 to 3 tsp. coconut extract 

2 large eggs

2 c. baking mix (see BakeQuick recipe in Dry Milk section) 

2 c. plain instant potato flakes

Preheat oven to 375°.  Lightly grease baking pans.

​

Cream the butter and sugar together.  Add extract and eggs, stir thoroughly. Next mix in the bake quick and potato flakes until dough forms, it's ok if it doesn't all hold together, it will do

so when you shape the cookies.  You could chill the dough, but I chose not to. Form/squeeze into 1- inch balls, then flatten into a thick silver dollar size. Place on baking pans 2 inches apart. Bake for 8-10 minutes, until edges are just slightly golden. Do NOT over-bake. Allow cookies

to rest on the baking pans for a couple of minutes before removing them to rack to completely cool.

Notes: I like to use 1 stick butter which is 1/2 cup, and a scant 1/4 c. of Spectrum shortening. Also,

would suggest cutting the sugar down to almost 1 and 1/2 cups.  This cookie would be great with lemon extract instead of coconut extract.....or maybe even vanilla......
