I am certain this will work with butter powder and powdered whole eggs, but since I haven't tried that as yet, I didn't want to put it in the recipe. I personally use just a bit less sugar (1 and 1/3 cups).

Janet’s Yellow Butter Cake

​

2 and 1/2 c. flour

1 and 1/2 c. sugar

4 tsp. baking powder

1/3 tsp. salt

4 T. dry milk powder

3 large eggs

2 tsp. vanilla**

1/2 c. butter, room temperature, very soft

1 c. water

 

Place flour, sugar, baking powder, salt, dry milk powder into a bowl and combine. Make a well

in center of mix. Add eggs, vanilla, softened butter, water. Beat mixture for one minute with an electric mixer on LOW speed. Scrape sides and bottom of bowl to be sure all ingredients are mixed. Beat 2 minutes longer until batter is smooth, free of lumps.  Pour into greased/floured pans and bake in a preheated 350° oven for 20 to 25 minutes.

Cake is done when it springs back when pressed lightly in center.
