Oat Pie Pastry

Makes a single crust pie shell. If need to bake first: prick with fork, bake 450° for 7 to 10 minutes.

1/2 c. quick oats

3/4 c. unbleached flour

2 tsp. sugar (omit if using pastry for a savory pie/quiche)

1/4 tsp. sea salt

4 T. cold butter + 3 T. shortening* 

3 to 4 T. ice cold water

Mix oats, flour, sugar, salt. Cut in butter and shortening until crumbly. With a fork: stir in ice cold water 1 T. at a time.

*Spectrum brand or vitacost natural shortening both work fine
