Oatmeal for Breakfast

A favorite way that we like oatmeal is to make a bowl per directions below, then while hot, add in

1 T. peanut butter + half banana cut up; allow peanut butter to melt, stir. Breakfast and protein and fruit in a bowl.

My version of Instant Oatmeal

I suggest you use snack baggies and recycle them for a few times since they only have the dry ingredients in them for this recipe. Make several at a time. CAUTION: in my experience, dry milk powder can go hard and clump in homemade mixes, I suggest you make enough to last a few weeks, but not for months ahead.

For each baggie:

1/3 cup quick oatmeal (can use 1/4 c. for smaller appetites, and can use 1/2 c. for large appetites)

dash sea salt

1 T. nonfat dry milk powder

up to 1 T. sugar or brown sugar

To make: put ingredients from one baggie into a deep bowl. Add about 1/2 c. water and stir (the amount of water depends upon how you like your cooked oatmeal, thick or thin). Microwave on

high for 75 to 90 seconds. Best to use a deep bowl as it bubbles up when hot/cooking.

**Addition Ideas: dried applesauce flakes, 1 T. raisins and dash of cinnamon; 1 T. craisins or dried blueberries. Sliced almonds, or chopped walnuts/pecans.  Dried bananas or dried apples broken into small pieces, freeze dried raspberries....etc.

Or after oatmeal is cooked: could add applesauce; frozen fruit, peanut butter/banana; chopped fresh or canned peaches or other fruit.

Apple Cinnamon Oatmeal

6 c. quick oats
1 and 1/4 c. nonfat dry milk powder
1 c. dried apples, broken into small pieces
1/4 c. sugar
1/4 c. packed brown sugar
1 T. cinnamon
1 tsp. sea salt
1/4 tsp. cloves or nutmeg

In a large bowl, combine all ingredients. Store in an airtight container in cool dry place for up to 6 months. This makes 8 cups of mix.

To prepare oatmeal:  In a saucepan, bring 1 cup water to a boil. While water is coming to a full boil: stir the mix and then measure out 1 cup of mix. Slowly stir in to boiling water; cook/stir over medium heat for 1 minute. Remove pan from heat. Cover; let stand for a couple of minutes to thicken. Makes 2 to 3 servings.

Baked Oatmeal

For this recipe we prefer to use rolled oats. Could also add a cup or so of fresh berries before baking but it is good without....

2 c. rolled oats

1/3 c. nonfat dry milk powder

1/4 c. sugar or packed brown sugar

1 tsp. baking powder

1 and 1/4 tsp. cinnamon

1/4 tsp. nutmeg or ginger or cloves

1/4 tsp. sea salt​

1 and 1/2 c. water

1 large egg

2 T. melted butter or coconut oil, slightly cooled

1/2 c. applesauce (can use applesauce made from dried apples)

1/3 c. raisins, optional

1/3 c. chopped walnuts, optional

​

Butter a square pan generously.  Heat oven to 350°.

​

Mix the dry ingredients thoroughly. Add in water, eggs, melted butter, vanilla, applesauce; raisins and/or walnuts if using; stir well. Put into prepared pan. Bake 20 to 22 minutes, golden brown. Cut

in 9 squares, eat while warm.  â€‹
