NOTE: red lentils break down when cooked, this is normal. The best price is to buy them in bulk. So let's say you found them at a store for $2.00 a pound? Then the lentils for this recipe would cost you

around 50 cents (there's about 2 and 1/4 cups red lentils per pound).

Red Lentil Tomato Soup

Healthy, low fat, filling......we could eat this 3 or 4 times a week!!  Delish!! Great storage

recipe.  We keep baggies of measured dry ingredients handy, so it's quick/easy to make. 



Bring to a boil, trun heat to low/simmer, cover, (cook about 30 minutes):

1/2 c. red lentils 
2 and 1/2 c. water
2 to 3 T. dried chopped onions
1 to 2 tsp. dried garlic bits

 


After 30 minutes, add:


2 T. extra virgin olive oil
1 can (14.5 oz) crushed tomatoes 
(or 1 pint home bottled tomatoes, chopped/pureed)
1 to 2 tsp. dried crushed basil
sea salt or salt to taste
pepper to taste

 


Bring to gentle boil, lower heat to simmer, cover, cook 15 minutes. Ready to serve, enjoy.

Makes 2 to 4 servings, will depend upon appetites.

Optional: can add 1 T. cider vinegar after taking off heat, and a dollop of olive oil; stir in.

Red Lentil Soup from dried tomato powder: 

I made the Red Lentil Tomato Soup with tomato powder, *not quite as tasty as if made

with crushed tomatoes, but still good.  Follow above recipe, but instead of adding the

can of crushed tomatoes, add 1 and 3/4 cups of water; stir. Add 3 to 5 Tablespoons of

tomato powder, it will be according to your taste, start with just 3 Tablespoons first; stir

well. Then after adjusting the tomato amount to your taste, add a teaspoon of sugar if

you think it's too acidic after tasting.

*it tasted better after I cooled/refrigerated it overnight!
