Hash Brown Bake

3 cartons dried hash browns (we use Idaho Spuds 4.2 oz cartons from Costco)

1 can cream of chicken or mushroom soup

1 and 1/2 c. sour cream

2 c. medium or sharp grated cheddar cheese

​

Add water to fill line in all 3 cartons of dried hash browns. Let sit 10 minutes.

​

Butter a 9x13 pan. Preheat oven to 350°.

​

Drain excess water from hash browns and put in a mixing bowl. Add cream soup, sour cream, and 1 cup of the grated cheese; mix well. Pour into buttered pan, smooth evenly with back of

a spoon. Top with remaining 1 cup of grated cheese. Cover with foil but do NOT seal the foil, just lay it on top. Bake for 25 minutes; remove foil, bake 5 to 10 more minutes. Remove from oven, let sit 5 minutes, ready to serve.
