*A word on Rumford's baking powder: it has no alum in it, so to me it is a healthier choice. We order it from our local health food store in a 5# bucket to get the best price (it can be spendy in the small tins). We have stored it this way for years. It is the only baking powder we use, ever.

Blender Whole Wheat Pancakes
At going costs, these healthy pancakes are about 6 to 8 cents each: that speaks to my frugal heart.

Can even use these cold leftover pancakes for bread to make a sandwich: I know it's crazy!!

​

Put in blender, let sit 24 hours (this is easy and takes very little planning ahead):

Note: by soaking this for 24 hours, it will soften the wheat for a smoother batter, but you can skip this step and just blend the wheat/water without soaking (if doing it this faster way, blend 20 seconds, let rest, and repeat this process several times until batter is smooth to your liking).


1 c. dry wheat
1 and 1/4 c. water

Blend soaked mixture for up to 1 minute, until smooth.

Add and blend again until smooth:

2 large eggs

3 T. dry milk powder

1 T. cooking oil

1 tsp. sea salt

Scrape blended mixture into a large mixing bowl.

 

Add and stir in by hand using a wire whip until combined:
1 scant T. baking powder (*Rumford's, see note above)

Cook pancakes on medium heat in a bit of oil. Makes 12 or more pancakes. ​

Amazing Wheat Waffles
Good recipe for introducing whole wheat flour to you/yours. No oil except what is used on waffle iron, amazing!!

 


1 c. whole wheat flour
1 and 1/4 c. unbleached flour (or white flour)
1/4 c. dry milk powder
3/4 tsp. sea salt or salt
4 tsp. baking powder
2 large eggs  (or **4 T. dried whole egg powder added into the unbleached flour + 6 T. water added to liquids)
2 tsp. cider vinegar
2 c. water (more as needed, but start with 1 and 1/2 cups, then add more until consistency of waffle batter)


Heat waffle iron.  Mix whole wheat flour, unbleached flour, dry milk, salt, baking powder, (and dry whole egg powder if using).  Add liquids, stir; add more water if mixture seems too thick.  Before baking each waffle, use spray oil.  Makes about 10 waffles in our waffle iron......this can vary depending upon size of waffle iron.

More ideas about pancakes/waffles:
Pancakes.........just use your current pancake recipe and replace up to 1 cup whole wheat flour for up to 1 cup of the white flour called for in recipe. Add 1 or 2 tsp. cider vinegar to liquids.


Or if you have pancake mix..........for every 1 cup of mix, add 1/2 cup whole wheat flour, 1/8 tsp. salt, 1/4 tsp. baking powder; add 1 tsp cider vinegar to liquids.

~Some people find pancake syrup is too sweet: try real maple syrup or applesauce on waffles and pancakes. 

~Pancake Mixes are a short term storage item only, DO NOT attempt to store it long term

Homemade Whole Wheat Pancake Mix 
6 cups whole wheat flour
1 c. dry milk powder
3/4 c. powdered dried whole eggs
2 T. sugar (or dried honey granules)
2 T. baking powder
1 T. baking soda
2 tsp. sea salt or salt

Mix all ingredients thoroughly. Store in gallon zip-loc bag in refrigerator.  Mark date made.  Use in 3 months.

To make whole wheat pancakes:
1 and 1/3 c. mix
1 and 1/4 c. water (start with this, add more if needed)
1/2 T. cider vinegar

Combine w.w. pancake mix, water, vinegar.  Add more water if needed. Ready to cook on medium heat. Makes about 12 pancakes. Note: whole wheat pancakes may take a bit longer to cook than white flour pancakes take, but the yummy results are wonderful.

Gingerbread Pancakes

This makes about 8 medium pancakes. Very easy to double or triple this recipe.  I like these with a thin buttery lemon sauce. Or can mix 1/2 c. syrup + 1 to 2 T. molasses + 1/2 to 1 tsp. ground ginger.

1 c. whole wheat flour

3 T. nonfat dry milk powder

1 T. baking powder

1 tsp. ground ginger

3/4 tsp. cinnamon

1/8 tsp. cloves

1/8 tsp. nutmeg

1/4 tsp. sea salt

1 c. water + 1/2 T. vinegar

1 T. oil or melted butter

1 large egg (or dried whole egg equivalent)

2 to 3 T. molasses

In large bowl mix to combine w.w. flour, dry milk, baking powder, spices, salt. Add water/vinegar, oil, egg, molasses; stir until smooth. Cook pancakes on a medium heat, test one for inner done-ness and adjust heat down to medium low if needed: do not cook on medium high, this pancake needs more time to cook on a lower temp so they are done inside, as well as not burned outside.

Whole Wheat Waffles

Makes about 5 waffles, depending on size of your waffle iron. These freeze very well after cooling.


1 and 3/4 cups whole wheat flour

1/4 c. nonfat dry milk powder
2 tsp. baking powder
1 tsp. baking soda
1 and 1/2 c. water + 1 T. vinegar 
1/4 c. vegetable oil 
2 eggs, beaten 

In a large bowl mix the w.w. flour, dry milk, baking powder, baking soda. add water/vinegar, oil, eggs

and stir all to thoroughly combine (at this point, do you think it needs a bit more water? If so, add a little at a time). Ready to cook.
