Easy No Knead Focaccia

This is a very easy pan bread that you start the night before. This

makes a brownie pan sized bread, but recipe can be doubled to

make a 9x13 pan.....

1 tsp. yeast 

1/2 tsp. sugar

1 c. warm water

Put this into a large glass bowl, let proof 10 minutes. Then add:

2 c. white or unbleached flour

1 tsp. salt

2 T. extra virgin olive oil

Stir in flour and salt just to combine, do not knead. Drizzle olive oil

over top of dough. Cover with saran wrap. Put in fridge overnight.

It will triple in size.

Take out of fridge. Coat brownie pan with olive oil.  Put cold dough

into pan, let rest 5 minutes, then stretch carefully to fit pan, with top

being level. Drizzle top with 1 T. olive oil. Cover with saran wrap, let

sit on counter for 2 to 4 hours.

Remove saran wrap, oil your fingers and dimple the dough all over

with your fingers. Sprinkle top with about 1/2 tsp. or so of garlic salt.

 

Bake in a preheated oven at 425° for 20 + minutes or until focaccia

is golden brown.  Remove from oven, cut in 6 pieces, serve warm.
