Peanut Butter Squares
I store graham crackers in my freezer since they don't get used fast enough to keep in the cupboard: just take them out of box, but not wrappers; put in a gallon zip loc bag and freeze.

1 stick (1/2 cup) butter
1 c. crushed graham cracker crumbs (about 8 full-sheet graham crackers)
2 scant c. powdered sugar
1 c. creamy peanut butter

1 c. semi-sweet chocolate chips + 2 T. creamy peanut butter

Line a square pan with foil; set aside (no need to butter the foil for this recipe).
​
In a glass microwave-safe bowl: melt the butter. Add the graham cracker crumbs and powdered sugar, stir. Add peanut butter, stir smooth. Press carefully in foil lined pan.
Now melt the chocolate chips and 2 T. peanut butter in microwave; stir until smooth
(do not over-cook, just melt it). Spread over the peanut butter layer. Chill in the fridge
until firm, 2 + hours. Turn out onto wax paper or parchment; peel off foil; let sit for 12 minutes to make it easier to cut into squares. It's fine to leave at room temperature for serving, but store the squares, covered, in fridge for up to 1 week.
