'Canned' Cheese Soup

Replace that expensive concentrated cheese soup (and get way better flavor).  Never buy canned cheese soup again!! This method, in my opinion, has a much better taste and is quick to make. So many uses for this tasty, easy, inexpensive cheese sauce/soup. This recipe makes the equivalent of one can concentrated cheese soup....

3 and 1/2 T. nonfat dry milk powder
3 T. unbleached flour
1/4 tsp. sea salt
1 and 1/4 c. water

1 T. butter

1/2 to 3/4 c. grated sharp cheddar (prefer, but could use medium cheddar or other types cheese)

Have this cheese ready before you start the cooking process. Try it with 1/2 cup cheese, then add more if wanting a cheesier taste. 
 


Put in glass jar with tight lid, shake until smooth: dry milk powder, flour, salt, water.  When smooth, place into a saucepan. Cook over medium-high heat, stirring constantly with wire whip, until sauce starts to thicken a bit. Turn heat to medium, add butter, cook/stir with wire whip for 2 minutes (sauce will get thicker, keep cooking/stirring....the flour must be well-cooked). Take off heat, immediately add the grated cheese, stir; let sit to melt; stir again. Ready!!

Baked Cheesy Potatoes

Note: you can make the 'canned' cheese soup ahead of time. It lasts 3 days or so in fridge if cooled first, then sealed in a storage container....

2 large fresh potatoes, peeled 

1 recipe 'canned' cheese soup

2 T. water

1/4 to 1/2 tsp. garlic granules

1/4 to 1/2 tsp. Lawrys season salt

1/8 to 1/4 tsp. pepper

1/2 c. or so of sharp cheddar + Lawrys season salt

Preheat oven to 375°.  Generously butter or oil a 9x13 pan.

Cut the potatoes into eighths lengthwise, then slice on the thin side....we don't want cubes, we want bite size slices. Mix potatoes, cheese soup, water, garlic granules, season salt, pepper until potatoes are coated. Place evenly in a buttered 9x13 pan. Sprinkle top with grated cheese and a bit of Lawrys season salt. Cover tightly with foil. Bake for 40 minutes, then remove foil and bake about 5 minutes more.
