Amish Onion Gems
I have not yet made these with reconstituted dry onions, but think it would work....

6 T. unbleached flour
1 tsp. sugar
1/2 T. cornmeal
1 tsp. baking powder
1/8 tsp. paprika
1/8 tsp. garlic granules
3 to 4 small pinches cayenne
1 tsp. sea salt
2 T. nonfat dry milk powder

6 T. water
1 and 1/4 c. chopped fresh onions (chopped in small cuts, but not too fine)
(can use finely chopped green onions for part of onions, if wish)

Mix dry ingredients first. Add water, stir; batter should be thick. Stir in onions and mix thoroughly. Heat 3/8-inch oil in skillet over medium high heat. Drop batter by Tablespoonfuls, flatten slightly. Cook on both sides until crispy golden. Drain on paper towels. Makes about 20 or so small patties. Can easily double recipe.
