Oat Peanut Butter Bars
These bars are quite tender, but so tasty!!
1 c. unbleached flour
1 c. quick oatmeal
1/2 tsp. baking soda
1/4 tsp. sea salt
1 stick butter, softened (this is 1/2 cup)
2/3 c. brown sugar
1/3 c. sugar
1 large egg
1/2 c. creamy peanut butter
1/2 tsp. vanilla

Preheat oven to 350°.

Grease or butter an 8x8 square pan.

Mix flour, oatmeal, baking soda, salt; set aside. Beat until smooth: butter, sugars, egg, peanut butter, vanilla. Stir in flour mixture to combine all. With buttered fingers, press evenly in prepared pan. Bake for 12 to 15 minutes (be careful to NOT over-bake, it will not be golden brown; puffed and looking just set). **Remove from oven. Cool in pan. Frosting is optional but tasty.

**Right after taking pan from oven, an option would be to sprinkle about 1 cup of chocolate chips
in a single layer onto hot bars, let sit 3 minutes, then gently spread for a thin layer of chocolate. Let cool. ​

Frosting:
1/2 c. creamy peanut butter
2 T. butter, softened
1 c. powdered sugar (may need a bit more)
2 to 5 T. milk or water
​
Mix peanut butter, butter, and 2 T. milk/water. Stir in powdered sugar. Mix until smooth, only adding more liquid IF needed. Spread carefully on completely cooled bars.
