No Flour Peanut Butter Cookies

Can use natural peanut butter but cookies will be a bit more crumbly....

​

1 c. peanut butter (smooth or crunchy) room temperature

1/2 c. sugar or brown sugar (could use more sugar if want sweeter)

1 large egg

(or equivalent of 1 powdered whole egg + needed water; mixed ahead and let sit a bit)

Preheat oven to 350°.

 

Line baking sheet with parchment.

Mix ingredients until smooth and on soft side, but able to handle. Roll into small balls, place on parchment 2 to 3 inches apart;  flatten with a fork in a criss-cross pattern.  Bake 8 to 10 minutes.  Do NOT over-bake; remove from oven and Cool on baking sheet.  Makes 12 to 14 cookies. 

 

Can easily double this recipe.
