Lentil Chili

​

3 c. dry green or brown lentils

8 c. water

1/2 to 2/3 c. dried chopped onions

1 lb. ground beef

1 small jalapeno pepper, chopped

4 tsp. chili powder

1 tsp. garlic granules

1 T. sea salt or salt

up to 1 tsp. cumin

1 can Rotel tomatoes

Combine lentils, water, dried onions; bring to a boil. Reduce heat, cover, let simmer 45 to 50 minutes or until lentils are done/tender;  stirring occasionally.   When lentils are almost done: brown ground beef and chopped jalapeno pepper; add to lentils.  Mix in chili powder, garlic granules, salt, cumin, and Rotel.  Bring to a boil, turn heat to low, cover; simmer about 20 minutes; stir as needed.

Serve with tortilla chips or cornbread.
