Scotchie Supremes

This was my dear husband's favorite cookie. They wouldn't even have time to cool before a stack would disappear!

1/4 c. butter, softened

2 T. shortening

1/2 c. brown sugar

1/4 c. sugar

1 large egg

1/4 tsp. almond extract

1/2 tsp. vanilla extract

1 and 1/2 c. rolled oats

1/2 c. unbleached flour

1/4 tsp. sea salt

1/2 tsp. baking soda

1/4 c. chopped walnuts

1 and 1/2 T. raw sunflower seeds

1 T. raw sesame seeds

1/2 c. butterscotch morsels

1/2 c. raisins

Preheat oven to 375°.

​

Cream butter, shortening, sugars, egg, extracts. Add oats and stir well. Add flour, salt, baking soda and mix well. Stir in nuts, seed, butterscotch morsels, raisins.  Drop by spoonfuls on ungreased baking pans. Bake 9 to 11 minutes. Cool for 1 minute on baking pan before removing to cooling rack.   Makes 18 cookies.
