It is going to be very hard for me to put up this recipe because of course I would want all of you to use whole wheat for your pancakes!!! But I do realize that isn't always the ideal case, so here is a super easy BUDGET pancake mix. You'll never have to buy pancake mix from the store again.....

Pancake Mix:
Can easily double this. This amount of mix will make about 22+ pancakes.

4 c. all-purpose flour
*3/4 c. nonfat dry milk powder
3 T. baking powder
2 tsp. baking soda
1 tsp. salt
2 T. sugar (optional)

Mix all thoroughly and store in a container with tight fitting lid. Use within about 2 months.

*if you don't have dry milk powder, just omit it. And use milk for the water in the pancakes below.

Pancakes:
This will be for about 6+ pancakes.

1 c. water (may need a bit more water)
1/2 T. vinegar
1 large egg
1 T. oil
1/2 tsp. vanilla (optional)
1 heaping c. Pancake Mix (if you didn't use dry milk, use 1 c. mix, not heaping)

Preheat and oil a griddle or fry pan over medium to high heat.
Stir water, vinegar, egg, oil to combine; add pancake mix and stir only to mix (a bit lumpy is good for light pancakes). If you think batter is too thick, stir in a little more water. Pour 1/4 to 1/3 cup batter at a time and cook until a few of the bubbles on surface of pancakes have popped. Flip and cook other side until it is light golden brown.
