Red Lentil Curry Soup

​

​

1 and 1/2 c. red lentils

1/3 c. dried chopped onions

1/2 c. dried carrot dices

1 T. instant chicken bouillon

2 to 3 tsp. curry powder

1 to 2 tsp. ground cumin

1 tsp. paprika

1 tsp. garlic granules or powder

To prepare soup: put all above ingredients into a pot with 6 cups water

and 1 can (13.5 oz.) coconut milk. Bring all to boiling, turn heat to medium

low, cover and cook until red lentils are tender/broken down. Serves 4 to 5.  

​

Note: this dry soup mix might fit into a pint jar for storing.

Variety recipe: make soup and near end of cooking, add

some cooked cubed potatoes and chopped fresh spinach

​
