Well, perfect for me (and I hope for you too) because not overly sweet. So in striving to help us have tasty frugal food using basic ingredients, I wanted to figure out a yum and easy less-sugar cupcake.  The frosting balances out overall sweetness, although it is optional.....

​

Instead of a fresh egg, could use dried whole egg + water per instruction on package required for one large egg: by adding dried egg amount to the dry mixture below, and required water amount

to the wet ingredients.....

Perfect Chocolate Cupcakes

First of all, place paper cupcake liners into a 12 capacity muffin tin, set aside.​

Preheat oven to 350°.

​

Mix in small bowl and set aside:

1 c. unbleached flour (white all purpose will also work, but do not use cake flour)

3 T. dry nonfat milk powder

2/3 c. sugar

1/2 c. dry cocoa powder

1 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt or sea salt

Mix well in a large bowl:

1 large egg

7/8 c. water (this is a scant 1 cup)

1/2 T. vinegar, white or apple cider

3 T. oil

1 tsp. vanilla

​

After mixing wet ingredients, using a wire whip, stir in dry mixture until very smooth.  Divide batter evenly in the 12 paper liners.  Bake 14 to 16 minutes until when top is lightly pressed with finger tip, the top bounces back, does not indent.  Remove from oven. Let cool for 5 minutes, remove to rack to cool completely.  Frost with a favorite icing only when completely cooled.

Here's a frosting idea: all ingredients are not long term storage items; although **powdered sugar should store for years when kept tightly covered.....

​

up 1/3 c. dry cocoa powder

2 or so c. **powdered sugar

4 to 6 T. butter, softened (or part butter + part cream cheese)

1 tsp. vanilla

water or milk as needed

JUST a bit of water or milk at a time only as needed for correct consistency of icing.

​

First of all,  mix the dry cocoa powder  and 1 cup powdered sugar;  then add remaining ingredients and mix all until smooth and to spreading consistency; add in more powdered sugar as needed for your taste/sweetness; and add maybe 1 T. water or  milk at a time as is necessary.
