The minimum amount of non-instant dry milk powder to store is 16 to 18 lb. but this is just for one

8 oz. glass of milk per day for 1 year for one person.......thus much more will be needed for baking and cooking. Because of high nutrient levels in powdered milk (protein, calcium, etc), if we had NO other food, we could sustain life for quite some time with just drinking only powdered  milk.

Storing more dry milk than the minimum requirement is a very good decision.

​

The taste can be improved by chilling overnight, after mixing the dry milk and water thoroughly.

Some people add a tad of sugar and vanilla before chilling.....

​

What are the correct amounts to use?

​

Instant dry milk: 1/3 cup per one cup of water

​

Non-instant dry milk: 3 T. per one cup of water

​

Evaporated milk: 1 cup instant dry milk powder mixed with

1 and 1/4 cups water is equivalent of 1 can evaporated milk

​

Quick sweetened condensed milk: Mix 1 cup plus 2 T. non-instant 

dry milk powder and 1/2 cup very warm water.  When well mixed,

stir in 2/3 to 3/4 cup granulated sugar and mix until smooth

​

Adding powdered milk to recipes inexpensively adds extra protein and calcium

Dry Milk

I prefer nonfat dry milk to the **instant dry milk in most ways using dry milk.  But I keep a supply 

of #10 cans of instant dry milk on hand for exceptions; our main storage supply being nonfat dry milk. As far as drinking it, having tested both kinds, we do prefer milk made from instant dry milk (reconstituted and chilled, could add a bit of sugar and vanilla for tastes sake). My sister started adding a little reconstituted dry milk to her family's regular milk, then increasing it a bit at a time until she was making entire gallons just from the dry milk. This gave taste buds time to slowly make the change and they had no idea she was doing this!! 


We buy, use, rotate our nonfat dry milk supply from LDS Home Storage Center. They sell dry milk in mylar bags.  Storage life is 20 years with proper conditions.  [Nice thing about dry milk: if you think it's too old or spoiled, don't throw it out, instead use it as a garden fertilizer]. I have a container with lid that exactly fits the contents of one mylar bag nonfat dry milk, to keep in my kitchen for regular use of nonfat dry powdered milk.  We use it in many recipes, especially for baked goods.

There are several companies that offer not only the nonfat dry milk in #10 cans,

but also instant dry milk in #10 cans, some have a better flavor than others.

​

**When using instant dry milk, I will state so specifically in the recipe. Watch carefully!!!

Nonfat, non-instant dry milk is easy to use in baking: 


My formula in baking recipes is 3 T. dry milk powder (non-instant) to 1 cup of water equals 1 cup milk

Some people may prefer to use 4 T. per 1 cup water.   


Thus, put the dry milk in with dry ingredients; and the water in with liquid recipe ingredients. Simple!!  


NOTE: If wanting to mix the dry part of a recipe ahead, be sure to stir the dry milk into other dry ingredients thoroughly, as it tends to clump/go hard if not well incorporated.

What can dry milk be used for???

​

Reconstitute and add to regular milk 

White sauce in a jar
Rice n' raisins breakfast crock pot pudding

In breakfast cereals such as instant oatmeal

Whole wheat pancake mixes

In homemade bisquick-type mixes

Oven Pancakes

Popovers

Scalloped potatoes

Potato soup base

Creamy soups using milk as a base

Use in baked goods and where recipes ask for milk

Homemade sweetened condensed milk

Dry pudding mixes

In yogurt making

Curds / Ricotta

Make cream or alfredo sauce for pasta

Have also seen recipes to use in cheese making, but haven't ventured there yet

Mix in muffin batter

Add to scrambled eggs before cooking

Mix in biscuits

Mix dry milk ahead and refrigerate for drinking

In hot cocoa mix

Rice pudding

Make cold chocolate milk

Make the night before to pour over boxed cereals

Whiz in a milk shake.

In making macaroni and cheese

Mix in bread dough

Mix in casseroles

Mix in cornbread

Use in cake batter

Add extra dry milk powder for added protein and calcium

Add two tablespoons to fortify liquid meals with more protein and calcium

Add to mashed potatoes

Make into buttermilk

Add to hot drinks instead of creamer

Use in cookie recipes

Take on trips to use for breakfast cereal

Take camping

Take backpacking
