Cinnamon Apple Bread
This dessert bread could also be for breakfast, with a cup of herb tea!

 


2 large eggs 
(or 4 T. dried whole egg powder added to the flour + 6 T. water added to liquids)

1/4 c. vegetable oil (or melted butter)
3/4 c. sugar
1 T. molasses (optional)
1 tsp. vanilla extract
1/4 c. water
1/2 tsp. cider vinegar
1 c. applesauce* 

**1 c. sifted unbleached or white flour
3/4 c. sifted whole wheat flour 
1 T. dry milk powder
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. sea salt or salt
1 tsp. ground nutmeg
3 to 4 tsp. ground cinnamon

 


Preheat oven to 350°.  Grease a 9x5 loaf pan.


Mix eggs, oil, sugar, molasses (optional), vanilla, water, vinegar, applesauce. 
In a separate bowl: mix the flours, dry milk, baking powder, baking soda, salt, nutmeg, cinnamon. 
Pour dry mixture into liquids and stir just to combine (do not over mix, it's okay for batter to be a bit 'lumpy'). Pour into greased loaf pan, gently spread to even out top. Bake 50 to 60 minutes, until a toothpick inserted in the center top comes out with moist crumbs but not wet-batter on toothpick. Remove pan from oven, allow loaf to cool in the pan for 10 minutes before turning out onto a cooling rack. Let cool on rack before slicing.

*can easily make  unsweetened applesauce from dried apples

**this tastes good with all whole wheat flour, if you are now used to the taste of whole wheat, I suggest using little or no white flour in this bread. Also, I like to use white wheat instead of red wheat for this 
**Before measuring, make sure to sift the flour....too much flour will make this dry/tough. OR gently spoon flour into measuring cup, use the back of a table knife to even off top
