Chappati
A simple flat bread made with all whole wheat flour......

The Hunza's use this as a mainstay. They live in a mountaintop area where cancer and heart disease are unknown. They eat mostly grains, foods from their gardens, and fruits (including apricots and the inner apricot kernel). Their grain is ground only as they use it.

2 c. whole wheat flour
1/2 tsp. sea salt or salt
1 c. warm water

Mix the flour and salt. Stir in just enough warm water to make a stiff dough. Knead and pound again and again until smooth. Form into 1-inch balls; keep covered. Take one ball at a time: using rolling pin or rolling stick, roll from the middle to outside, turn a bit, roll from middle to outside, repeat to form an 8-inch very thin, flat round. Cook on a hot griddle, turning to cook both sides (may need to slightly oil/grease griddle to prevent sticking). Serve immediately while warm.
