Quick Oat Bread
Make oat flour by grinding quick oats in a food processor until it's a fine flour. The water and honey should add up to 1 cup totaled together, so you decide the sweetness (personally we use 2 T. honey and 7/8 c. water). Easy bread to accompany many different kinds of meals....

up to 1 c. water
2 to 4 T. honey
2 eggs (or dried whole egg equivalent + needed water)

2 c. oat flour
3/4 c. unbleached flour
3 T. nonfat dry milk powder
1/2 tsp. sea salt
3/4 tsp. baking soda
1/2 tsp. baking powder

Preheat oven to 350°
​
Grease a loaf pan.

Mix water, honey, eggs; set aside. Mix dry ingredients; then stir in the liquids until batter is smooth but not over-mixed. Let batter sit 5 minutes, then scrape into prepared loaf pan, smooth top. Bake 40 to 45 minutes, toothpick test center top (done when toothpick comes out clean). Cool in the pan
at least 10 minutes. Remove to rack, let cool at least another 10 minutes. Tends to crumble, so the cooler then the better it will hold together when sliced. Makes 10 slices.
