This recipe can easily be doubled.....
Black Bean Burgers
Can eat these with *steak sauce, on a bun or not. Or top with lettuce, tomato, etc....

1 and 1/2 c. cooked black beans; drained (or a 15 oz. can of black beans drained but not rinsed)

3 to 4 T. extra-virgin olive oil, divided
1 medium small onion, finely diced
1 to 2 garlic cloves, minced

1 large egg
1/2 c. whole wheat bread crumbs or oat flour
1/4 tsp. paprika
1/4 tsp. chili powder
1/2 tsp. ground cumin
3/4 tsp. liquid smoke
1/8 tsp. red pepper flakes
1/2 tsp. sea salt
Hamburger buns (optional)

First of all: pat drained black beans dry with paper towel. Preheat oven or countertop/toaster oven to 325°. Spread beans evenly onto a parchment lined baking sheet and bake for 15 minutes to dry out slightly.

Cook onions in 1 T. olive oil on medium heat until they begin to brown, stir occasionally. Last minute of cooking onions, stir in/cook the minced garlic. Remove from heat, let cool while partially mashing beans, then stir in cooked onions and garlic. Mix in egg, bread crumbs, paprika, chili powder, cumin,
liquid smoke, red pepper flakes, and salt. Form mixture into 4 on-thin-side patties. In a skillet: heat olive oil over medium heat. Cook on one side until patties start to crisp on edges, turn carefully only once to cook other side.

Serve as is with *steak sauce, or on hamburger buns. I was thinking as typing this recipe: how about topped with a slice of cheese, no bun?
