Peanut Butter Popcorn

16 c. of popped popcorn (1/2 cup unpopped popcorn)

2/3 c. granulated sugar

1 c. light corn syrup

1 c. peanut butter

1 tsp. vanilla extract

Sift popped popcorn, place popped popcorn into a large bowl.

Combine the sugar and the corn syrup in a medium saucepan. Set over medium heat and bring

to a boil.  *Boil for 2 minutes.  Remove from the heat. Add the peanut butter, and stir to combine. 

Stir in the vanilla. Pour mixture over the popcorn and stir to coat.

*Do not cook more than 2 minutes: it will get too thick, and it will be hard to stir into the popcorn.

If it is too hard to stir in, that means it was cooked too long. Just cook it to dissolve the sugar, so reduce cooking time if you are having problems.
