Oatmeal Pie

A lovely and inexpensive dessert. Guest worthy....

1 unbaked wheaty pie crust, 9-inch (see pinto 'pecan' pie recipe in bean section)

​

1/4 c. sugar

1/2 c. brown sugar

2 T. unbleached flour

1 tsp. cinnamon

1/4 tsp. sea salt

4 large eggs

1 c. light corn syrup

1/4 c. melted butter

1 tsp. vanilla

1 c. (dry) quick oatmeal

Preheat oven to 350°.

​

Mix sugar, brown sugar, flour, cinnamon, salt. Beat eggs until frothy, stir into dry mix. Add corn syrup, butter, vanilla. Mix in oatmeal. Pour into unbaked pie crust. Bake 45 minutes. Remove from oven, let sit to cool to room temperature: this firms it up for cutting.
