Italian Chicken Rice Soup

Could serve this with garlic bread and a side tomato-cucumber salad....

heaping 1/2 c. dried chopped onions

1 tsp. garlic granules

1 T. italian seasonings

2 T. olive oil

5 to 6 cups chicken broth 

1 c. brown rice, not cooked

4 c. packed chopped **fresh spinach or kale

1 to 2 cups cooked diced chicken (canned chicken works, just cut in small pieces and do not drain)

In large pot, bring to a rolling boil: dried onions, garlic granules, italian seasonings, olive oil, broth, brown rice. Turn heat to medium low, cover, let cook until rice is tender, about 30 minutes or so.  Add the chopped spinach and cover, cook 5 minutes (if using chopped kale, cover and cook 10 minutes or until kale

is tender). Take off heat, then add the cooked or canned chicken.

**want to try this with some dried spinach I bought in a #10 can.....will add results later
