Huevos Rancheros Scramble

A quick and easy breakfast, lunch, or supper!  Very filling....

​

 

For one serving:

 

1 T. oil

​

1 to 2 T. water

1 to 2 large eggs (or whole dried egg equivalent + water)

1/8 to 1/4 tsp. sea salt

​

3 to 5 T. crushed corn tortilla chips

1/4 to 1/3 c. cooked/drained pinto beans

​

salsa

sour cream

Heat a small fry pan on medium. Add 1 T. oil. 

​

Meanwhile in small mixing bowl:  beat water, egg, salt for 20 seconds. Stir in crushed corn tortilla chips and pinto beans; let this sit while pan/oil heats. Pour mixture into hot oil, cook until able to turn. Turn and cook the other side.

 

Put on a plate, top with salsa and sour cream.
