Often I am repeating myself, but have taught these principles for years and I know they work for me.... Just recently a friend I met through my classes (she has been eating whole grains and basic

foods for a while now) went to the doctor. Her exam was of a very good improvement over her last visit.  Eating the whole grains, beans, etc. is frugal, saves $$$, and for most improves health....

Whole Wheat Crepes

These crepes are great for *breakfast spread with jam and rolled up. BUT, these crepes can also be used as a base for dinner crepes with a variety of dinner fillings and sauces.

3/4 c. whole wheat flour

1/4 c. dry milk powder

couple dashes salt

3 large eggs

1 c. water

Mix in blender until smooth. 

In crepe pan or small fry pan: 1/4 tsp. oil or butter, heat, swirl in pan.  Add **2 T. batter; immediately lift/tilt pan until batter spreads into a very thin 'pancake'. Cook until surface is dry and edges slightly browned. Carefully turn to just lightly cook the other side. Turn out on plate, spread with jam, roll up and secure with a toothpick.  Repeat until all batter is used.

*the jam is one suggestion.....it could be peanut butter and jam, syrup, applesauce, etc. [We prefer homemade low sugar freezer jam made with Cornabys E-Z Gel;  making our own assures flavor and sweetness to our tastes, we do not prefer overly sweetened jams].

**my small fry pan holds 2 T. of batter for making a crepe. But, a crepe pan might use more???
