There are several companies that sell Freeze Dried cheese in #10 cans for storage. These usually store 5 to 10 years. Beware: this is expensive and not a basic storage item. If I was out of mozzarella for this dish, I'd top it with some dried parmesan....we buy that in a large container and keep it refrigerated to last a long time.

Pizza Rice Bake
This recipe reheats very nicely, and the leftovers will keep in the fridge for a few days. Could serve with side salad, green beans or zucchini; and maybe some garlic bread....

1/2 lb. ground beef, or italian sausage, or sausage (we like Jimmy Dean brand)
1 medium onion, finely chopped
1 to 3 cloves garlic, minced
3 cans (8 oz. each) tomato sauce
1 tsp. garlic salt
2 to 3 tsp. italian seasonings
2 c. uncooked white long grain rice
1 or more c. grated mozzarella (or 1/2 to 3/4 c. dried parmesan)

Brown meat, onion, garlic. Mix tomato sauce/garlic salt/italian seasonings with enough water to equal 4 and 1/2 cups. Add uncooked rice and browned beef mixture; stir all. Put into a greased 9x13 pan. Cover tightly with tin foil and bake at 350º for about 40 minutes; or until rice is tender. Remove foil, sprinkle top with mozzarella, bake 10 more minutes uncovered, to melt the cheese. Remove pan from oven, let stand about 5 minutes. Makes 6 to 8 servings.
