USING ZUCCHINI PULP: when you have big zucchinis and the seed/pulp

area is often cut off, do not throw out!! Here is one way to use it....

Zucchini Pulp Potato Soup

​

Coarsely chop zucchini pulp, place in a pot (no water is added).

Start bringing it to a boil, when boiling, turn heat to medium.

Add in some cubed potatoes, garlic, salt, pepper, dried chives.

Cover. Cook until all is tender. Remove from heat, salt to taste.

Add some milk or cream to taste, Stir well. Serve.

Be creative: could add some dry chicken seasonings, some dried

chopped onions, or other seasons to your taste!
