Ham n' Bean Stew


Cook in pressure cooker:
1 c. white beans, sorted and rinsed 
5 c. water
1 T. oil   

 


When beans are tender, can transfer to a pot if needed, then add to beans/liquids: 


1/3 c. dried chopped onions 
1/4 c. dried carrots
2 T. dried celery
1/4 to 1/2 tsp. thyme 

water according to preference 


Bring to boiling, turn heat to medium, cover, cook 20 minutes.

1 can chopped smoked ham (5 oz.)
up to 2/3 c. potato flakes

​

Then add the ham, do not drain (flake ham with a fork before adding to soup); stir in.  Mix in potato flakes, stir, simmer on low heat for about 5 minutes, covered.  Turn off heat, keep covered, let sit 5 minutes.
