Hot Cocoa Pudding

Using hot cocoa mix.... Remember the cocoa mix already has sugar.... 4 servings....

 

 

1/4 c. cornstarch

2 T. brown sugar (or 2 to 3 T. white sugar)

couple dashes of sea salt

3/4 c. hot cocoa mix

1 c. cold water

1 c. hot water

1/2 tsp. vanilla

tad of butter

 

 

In a small saucepan: mix cornstarch, sugar, salt, hot cocoa mix. Add cold water and stir with wire whip to dissolve. Then add hot water. Turn heat to medium heat; cook and stir constantly using a wire whip, until mixture thickens and comes to a boil.  Take off heat, stir in vanilla and butter. Let cool to warm in pan or in bowls. Can eat warm; or chill first.
