Zucchini Brownies

​

1 and 1/4 c. sugar

1/2 c. oil 

2 c. unbleached flour

1/4 c. unsweetened cocoa powder

2 c. grated zucchini 

2 tsp. vanilla

1 tsp. sea salt

1 and 1/2 tsp. baking soda

1 and 1/4 c. semi-sweet chocolate chips divided

Preheat oven to 350º. Grease a 9x13 baking pan and set aside. In a mixer, on low speed: sugar, oil, and flour, cocoa, shredded zucchini, vanilla, salt, and baking soda. Mix until well combined. Stir in 1 cup of the chocolate chips. Pour brownie batter into prepared pan, smooth top, and sprinkle with remaining chocolate chips. Bake 28 to 32 minutes

or until a toothpick in center comes out clean and the brownies are set.

 

Completely cool in pan, before cutting brownies into squares.
