Hush Puppies

​

1/2 c. reconstituted milk + 1/2 T. vinegar

1 c. stoneground cornmeal

1/4 c. unbleached flour

1 tsp. sugar

3/4 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. sea salt

1 egg, beaten (or powdered equivalent/water)

Mix milk with vinegar, let sit.

​

Heat oil in deep fryer to 370°.

​

Combine cornmeal, flour, sugar, baking powder, baking soda, salt. 

​

Stir egg into soured milk; beat; add to dry ingredients, stir just to moisten (batter will be lumpy). Drop by Tablespoonfuls into hot oil, fry four or five at a time for about 3 minutes until golden, turning once.  Drain on paper towels, serve immediately.  Makes about 18 hush puppies.
