Mom's Oatmeal Raisin Cookies

A favorite cookie my Mom made for us often; then I made for my children often. (Some people

add in a teaspoon of cinnamon, but my Mom never did, so we like them without the cinnamon).

Sometimes I'll add a 1/2 cup or so of chopped walnuts.

3/4 c. butter, softened (or part butter and part shortening)

3/4 c. packed brown sugar

1/3 to 1/2 c. sugar

2 eggs

1 to 2 tsp. vanilla 

1 and 1/2 c. unbleached flour 

1 tsp. baking soda

1/4 to 1/2 tsp. sea salt

3 c. rolled or quick oats

1 c. or so of raisins**

​Heat the oven to 350°.  Lightly grease baking pans (or use parchment paper).

​

In a large bowl, beat together the butter/shortening and sugars until creamy. Add in the eggs and vanilla; beat until smooth. Combine flour, baking soda, salt in a medium bowl.  Add into the butter mixture, stir well.  Stir in oats and raisins until all is well combined. Drop by rounded Tablespoonfuls onto baking pan. Bake 8 to 10 minutes or until light golden brow; remove from oven. Allow cookies to cool for 2-3 minutes on the pan; then remove to wire rack. If you move them too soon they could fall apart!  Makes about 3 dozen or so.

**could add a cup or so of coconut instead of the raisins
